Sweet and Sour Watermelon and Cucumber

1/2 cup cider vinegar

1 cup water

1/2 cup sugar, to taste

1 tbsp poppy seeds

Salt and pepper to taste

1 bunch shallots, trimmed and chopped

3 cups watermelon balls, seedless

2 English cucumbers, peeled, seeded and sliced

Mix vinegar, water, sugar and poppy seeds in a bowl and season. Stir in shallots. Place watermelon and cucumber in a serving bowl and pour the marinade on top. Serve immediately (or cover and refrigerate, then toss gently before serving). For extra effect, serve in half of a hollowed-out watermelon.

Serves 8 to 10.
