Breakfast is THE most important meal of the day. We all know this, so why do we choose to gulp down a latte and grab a muffin as we rush to work? This not setting you up for a good day – rather a mid-morning low. Even if sleep wins the battle for time in the morning, if you whip up one of these smoothies, you can tick all the ‘good start to the day’ boxes. Protein, Tick. Antioxidants, Tick. Fibre, Tick. Good plant fats, Tick. Yumminess, Tick, Tick, Tick. And if you make up a batch, it’s good for a couple of breakies. Another big tick!
Kale, Blueberries & Cream Smoothie
Serves 2-3
1 cup fresh/frozen blueberries
1 cup coconut water or unsweetened almond,
hemp, rice, coconut milk
1 tablespoon coconut oil
1 tablespoon flax or chia seeds
1 handful kale
1 splash vanilla extract
1 pinch cinnamon
1 tablespoon raw, organic honey or stevia (optional)
1 handful ice (optional)
Combine all ingredients in a high speed blender. Blend and enjoy.
Blueberry Smoothie
Serves 2
1 handful frozen or fresh organic blueberries
1 banana
1 tablespoon extra-virgin coconut oil
1 tablespoon hemp seeds
1 tablespoon chia seeds
1 pinch of cinnamon
ó cup to 1 cup hemp milk, almond milk, oat milk, or coconut water as your base
Put all ingredients into a high speed blender and blend until creamy. Sip and savour!
